WEEKEND CHEAT DAY: FOOD PORN

One of the MANY things I LOVE about being an adult – is that – ROASTED PLANTAINS in Ghee with Salted Caramel Sauce, toasted Pecans, and Ice Cream can legitimately qualify as dinner. UMMMMMMMM.

1) Buy a large Plantain and let it turn brown 4-5 days.

2) Preheat oven to 350-400 and melt a little Ghee or oil.

3) Cut Plantains into wedges and roast till crispy. Flip once. Chop Pecans and add halfway through.

4) Salted Caramel sauce (1 can of Sweetened Condensed Milk. Add Butter, Brown Sugar and Salt to taste). Oh sweet heaven. Freezes EXCELLENTLY.

5) Use up leftover Ice Cream.
