AMAZING CHEAT DAY (Gluten or Gluten free) Cornbread and Cinnamon Butter Recipe

1 and a 1/2 cups of either flour or Pamela’s Artisan Flour Blend
1/2 cup cornmeal
1 tbsp baking powder
2/3 cup sugar
1/2 tsp salt 
Mix dry ingredients well.

1/3 cup vegetable oil
2 tbsp, 2 tsp melted butter
1 tbsp honey
1 and 1/4 cup milk
2 eggs
Mix wet ingredients well.

Preheat the oven to 350 degrees.

Barely mix the wet and dry ingredients together, just enough to moisten the dry ingredients and pour into a greased loaf pan. 

Bake 45 min to an hour – test with a toothpick at the 45 minute mark. In my oven it takes closer to an hour but they all vary. 

Cinnamon Butter Recipe: 

Set out 1/2 cup butter overnight so it is soft in the morning (with a handheld blender mix in)
2 tbsp packed brown sugar
1/4 tsp nutmeg
1/4 tsp cinnamon
1/2 tsp vanilla
Spoon mixture into cool looking ramekins and refrigerate so the butter has a chance to firm up again and take shape. 

What You Need to Get Started:

For the gluten free version you will need Pamela’s Artisan Flour Blend sold at Whole Foods. 

A cast iron loaf pan (see Amazon link below), or an enameled cast iron loaf pan or a glass loaf pan. Never use aluminum cookware. 

If you are making the cinnamon butter it will be helpful to use a handheld electric mixer. 


Do not over mix the wet and dry ingredients, especially if making the gluten free version of this recipe. If making the gluten free version mix the ingredients as little as possible. 

This recipe can easily be doubled and the results will be excellent.
